2004 CHARDONNAY BY STEVE REYNOLDS
ALCOHOL: 14.3%
This is a crisp, yet soft and full-bodied Chardonnay with a concentrated palate of bright tropical fruits and a hint of coconut. Beautifully balanced and no malolactic fermentation, making it a very food friendly wine. Pair with seared scallops and a salsa of mango, avocado and parsley...delicious. $38.00
WINEMAKING PROCESS:
The Chardonnay is whole berry pressed and then cold soaked for 24 hours. A non malolactic fermentation follows in stainless steel then cold settled and aged off the lees. The wine is barrel aged in 20% new Oak, 80% Neutral oak to promote mouth feel and texture. This will maintain the bright fruit flavors and aromas characteristic from this vineyard.
